Baileys Chocolate Mousse
Rich, silky and irresistibly smooth — this Baileys chocolate mousse is the ultimate Easter indulgence. Creamy, chocolatey, and finished with a hint of Baileys, it’s the perfect dessert to impress with minimal effort.
INGREDIENTS
200g dark chocolate
300ml double cream
2 tbsp sugar
50ml Baileys
2 eggs
METHOD
Melt the dark chocolate gently and allow it to cool slightly.
Whip the double cream until soft peaks form.
Separate the eggs and whisk the yolks with sugar until pale and creamy.
Stir in the melted chocolate, then add the Baileys.
Fold in the whipped cream.
Whisk the egg whites until stiff peaks form, then gently fold them in.
Spoon into glasses and chill for at least 2 hours before serving.

250g mascarpone
200ml double cream
100ml Kahlúa

METHOD
Mix the espresso with Kahlúa.

Whip the cream and fold into the mascarpone.
Spread a layer over the biscuits.
Repeat the layers until complete.
Chill for at least 4 hours (overnight is best).
