Dom Perignon P2 Vintage 2008 Champagne 75cl

Plentitude Deuxieme

After an incredible harvest in 2008 and spending over 15 years maturing in lees, this expression of Dom Perignon was born to be a classic. Wine critics have scored it between 99-100/100, which in itself is rare. Simply an outstanding vintage Champagne created by cellar master Vincent Chaperon.

Official Tasting Notes

Dom Pérignon Vintage 2008 Plénitude 2 has widened. As it lands on the tongue, its edges are climbing up the palate, fulling a more complete tactile space. The acid frame is entwined with bitter and umami hints, as if it was braided, hence becoming more consistant. It unfurls like the Kanagawa wave, scintillating, radiating, lilting. Candied lemon, bergamot, white peach, cocoa, roasted coffee. Its freshness is vibrant as well as silky, with a solar presence, slightly iodized.

Recommended Food Pairing

The wine is vibrant, a trait that can be revealed by lobster, molé verde and cardamom. The combination of veal, dashi broth and spirulina will bring out the paradoxical facet of the wine while pigeon, pistachio and kalamanci baklava will highlight its light. The wine is tactile: a green tomato sorbet will magnify its silky, creamy character. The wine exhibits a balanced tension: a facet that can be explored thanks to roasted pineapple, candied citrus peel and aniseed.
