Champagne, derived from the French region of Champagne, is the sparkling wine of choice for complexity, aromatic flavours, precise taste, and sophistication. The product is made up of three grape varieties (Pinot Noir, Pinot Meunier, and Chardonnay) that are combined to produce a still wine. The wine is carefully bottled with sugar and yeast. After which the bottled is capped, laid to its side, and kept cool in the cellars of the region for a minimum of 12 months. This is the beginning of the fermentation process. During this process, the alcohol is produced and carbon dioxide is encapsulated in the bottle which leads to the creation of bubbles. Further processing is required that gives the champagne its unique characteristics.

Regulations and French laws protect the use of the word 'Champagne' and although there are several sparkling wine-producing nations, Champagne is exclsuively reserved for sparkling wine produced in the French region.

Sparkling wine is a wine with a significant about of carbon dioxide within, making it bubbly. The Carbon dioxide can either be the result of natural fermentation either within the bottle which is the traditional method, in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of a carbon dioxide injection.

In a nutshell, sparkling wine can be produced in any wine-making country, however, Prosecco is from a specific region in North Italy, Champagne is from a region in France and Cava is Spanish sparkling wine.
