This is a very nice mead, if very sweet. It's a lot like a dessert wine, in terms of sweetness and consistency. Has a very rich, full-bodied honey flavour and makes an excellent accompaniment to rich, hot, sweet Winter foods like mince pies, steamed puddings and spiced, baked plums.
We used some to deglaze the pan for our beef casserole, the same way one might with red wine or ale, and the resulting gravy was absolutely DELICIOUS. The mead didn't leave a strong honey flavour in the casserole, but really enhanced the overall dish.
We then served it afterwards as an accompaniment to a spiced plum tart - pastry base, stoned plum halves stone-side-up in the base sprinkled with golden sugar and cinnamon, with another glug of mead poured into the pitts before baking.
